Menu Plan Monday

I’m going to admit right up front that last week was a bit of a culinary failure. I don’t know what I did wrong, but I struggled a ton with the barbacoa pork. It tasted good, but I don’t think the meat ended up as tender as it should have. Also, the chile relleno eggs were tasty but a complete mess. I’m going to have to try that again with a slightly different formula. At least my cookies came out, though, right?

I feel like this past weekend completely flew by and that bums me out. There was a ton going on, not the least of which was having friends over on Sunday to watch the game. Just like a couple of weeks ago, I focused my grocery shopping for the week on our party menu and figured there would be plenty left over for the week.

Our party menu consisted of:

  • Dill Pickle Dip {Oh.Em.Gee. This is my new favorite party food. I totally cheated and used dill pickle relish instead of chopping my own, though.}
  • Loaded Turkey Santa Fe Baked Potato Skins {I thought these were really good, but they didn’t really get eaten. Maybe I’m weird.}
  • Italian Drip Beef Sandwiches {I used dinner sized French rolls for these. They were the perfect size.}
  • Turkey Chili Dip {I kinda made this one up based on this recipe. I used a can of turkey chili with no beans, 8 oz. of low fat cream cheese, 3/4 can diced jalapenos. It was really good and super low points, too.}

I’ll be eating what’s left of that {which unfortunately does NOT include pickle dip} for the rest of this week. I’m pretty excited about getting to eat snack food for the week. What’s on your menu this week?
