What’s Cooking this Week?

I haven’t been meal planning the last few weeks which is evident from both the lack of blog posts on the subject and the weight I’ve gained recently. Since I weighed in Thursday for the Biggest Loser competition at my work, though, I figured it was time to get back at it.

My friend Terri and I decided that we would both cook this weekend and share what we make for lunches through the week. We’re hoping to keep the amount of leftovers we both have to eat to a minimum and still get what we cooked eaten. This tends to work well for us when we actually do it rather than talking each other into going out 5 times a week.

The plan for this week is pretty simple because I like to ease back in to my meal planning.

I started off by making some of this Slow Cooker Green Chile Pork from my friend Christina’s blog. I actually stumbled across this recipe while google-ing “slow cooker pork recipe” – I must have missed it the first time around. I bought some fresh tortillas to go with it and I’m going to take Christina’s advice and try feta on my tacos.

I have had wanted to try this recipe for Rocco Disprito’s Mac & Cheese for a while. In his book Now Eat This, Rocco uses a lot of tips and tricks that are intended to add flavor and minimize fat/calories. Everything else I’ve tried from there has been really good and I’m hoping this will be, too. I may change it up a bit, but mostly only because I am not a fan of whole wheat pasta.

If you’ve read this blog or you know me at all in real life, you will have heard about this recipe for Sausage & Mushroom Strata. It’s one of my absolute favorite things to eat for breakfast. I could probably eat it every single day and never get bored, it’s that good. And even better, it’s less than 300 calories for a really healthy sized serving. And did I mention it’s yummy?

And finally, because my sweet tooth has been in overdrive lately, I’m going to make these Low Fat Chocolate Cupcakes {also from Skinnytaste}. We have a bake sale at work later in the week so I’m going to save half for that. You know, because I don’t need to eat 24 cupcakes even if they are only 100 calories each.
