Cinco de Mayo Made Easy

Sometimes Sal cooks things that are shockingly simple and then I stare at him in awe because they don’t taste simple at all. This is definitely one of those dishes. It’s so good that I could eat it once a week and {bonus!} it’s not crazy high fat and calories – until you cover it in avocado as seen above and even then it’s good fat. If you’re looking for something quick, easy and HEALTHY to celebrate Cinco de Mayo with, this is definitely your dish. Pair it with your favorite Mexican beer and you’ll be a happy camper. I promise.


Easiest Ever Carne Asada
{serves 2-4, depending on your crowd}

1 lb flank steak
1 beer
½ red onion, sliced
1 jalapeno, sliced
1 orange, cut in quarters
Salt & Pepper to taste

1. Add ingredients {except oranges} to a gallon Ziploc bag. Squeeze juice from oranges into bag and throw in rinds.
2. Marinate for several hours or overnight.
3. Sprinkle salt & pepper on meat and grill a couple minutes per side {until medium or medium rare}.
4. Slice and serve immediately.
**Flank steak is about 1 PP per ounce so this dish is 8 PP if you do 2 servings or 4 PP if you do 4.

Bean & Zucchini Salad
{serves 4}

2 cans beans {whatever kinds you like}, drained
3 zucchini
½ red onion, chopped
½ bunch cilantro, chopped
1 jalapeno, chopped finely
1 oz olive oil
1 tbsp balsamic vinegar
Salt & Pepper to taste

1. Salt and pepper zucchini, then grill until lightly charred on both sides
2. Once cooled, chop zucchini.
3. Toss all ingredients in a bowl with olive oil and balsamic vinegar.
4. Season to taste.
5. Serve slightly warm or make ahead and refrigerate until you’re ready for it.
**This dish is about 4PP per serving. You could probably cut down the olive oil a touch to lighten it up, but I think 4 is pretty good.
