I never like to miss an opportunity to show off my husband’s fabulous cooking skills so when I was presented with an opportunity to take part in this virtual summer dinner party, I was all over it. The idea was to keep things light and fresh – I think this super simple recipe does just that. Seriously, 5 minute of prep and 15 minutes of cooking. Does it get any easier?
Summer Dinner Party Menu
{doesn’t it sound amazing?}
Pear, Pistachio & Gorgonzola Pita Wedges
Baked Branzino
White Chocolate & Fruit Parfaits
Baked Branzino
{serves 4}
4 whole branzino
2.5 cups Italian parsley
1 tbsp capers
2 cloves garlic
1 tsp oregano
1 cup olive oil
- Preheat oven to 350
- Put all ingredients in food processor and emulsify in oil
- Salt and pepper both sides of fish. Place in oven for 10 minutes
- Cover fish in parsley oil and continue baking for 5 minutes
- Serve with grilled asparagus and lemon
